Course on onboard food service systems will provide a comprehensive understanding of managing food
and beverage operations on various modes of transportation, including airlines, trains, cruises and
space crafts . In its introductory phase students will learn about the unique challenges and
opportunities of providing food service in a confined space and with fluctuating passenger
demographics.
